Risotto is soooooo good for your health. I don't mean the rice and delicious Parmesan cheese; I mean the act of lovingly and patiently stirring arborio rice in the risotto style while sipping a glass of Italian wine. It's cathartic and good for the soul. I'm a fan of experimenting with risotto and just love this sweet corn and shrimp version perfect for pescetarians.

Guys, I made sushi!!!!! Sushi was always one of those "scary" culinary propositions, but this was really quite easy. The mango slaw was super simple and frying the shrimp was way easier than expected. This can be made as a maki roll or a "sushiritto" so it's a total crowdpleaser.

I love cooking for friends and family. My two friends whom I know from Zumba class were coming over for dinner so I knew I needed to cook something delicious AND healthy (and kind of easy since I have a newborn); this delicious dish fit into all of these buckets.
