2 cups cake flour
2 eggs, separated
2 cups buttermilk
4 tsp. baking powder
1/2 tsp. salt
1/4 cup sugar
Slightly less than 1/2 cup vegetable oil
1 tsp. vanilla
In a small bowl, mix together dry ingredients (cake flour, baking powder, salt and sugar) and set aside.
Separate the eggs and whip egg whites until firm peaks are formed. Set aside.
In a stand mixer, or by hand, gently mix together the egg yolks, vegetable oil, milk and vanilla. Slowly add in the dry ingredients and continue mixing until totally combined. Fold in the egg whites.
Using a Belgian waffle maker, follow the instructions for cooking. Top with homemade whipped cream (in a stand mixer, whip heavy whipping cream, 1-2 tsp. vanilla and 3-4 tsp. sugar until whipped cream consistency), warm syrup and berries (if desired).
