For the salad:
1 10-12 oz. bag shaved Brussels sprouts
1 honey crisp apple, super thinly sliced (use a mandolin if you have one)
1/2 cup toasted slivered almonds (simply toast them on the stove top in a dry pan for a few minutes, tossing constantly)
1/2 red onion, sliced very thin (you can use the mandolin for this, too)
Shaved Parmesan (leave out if vegan)
For the dressing:
Zest of 1 lemon
Juice of 1 lemon
1 Tbsp. white miso paste
1/4 cup apple cider vinegar
1 Tbsp. honey
6 Tbsp. extra virgin olive oil
Crushed red pepper, to taste
In a large bowl, combine the Brussels sprouts, almonds, onions and sliced apples.
In a Vitamix or other blender, combine the lemon juice, zest, white miso paste, apple cider vinegar, honey, olive oil and crushed red pepper (I used approximately two teaspoons).
Toss salad with the dressing, top with shaved Parmesan and serve.
