3 Tbsp. sugar
1/2 cup flour
1/2 tsp. salt
1/2 cup whole milk
Splash of vanilla
2 Tbsp. butter
Pre-heat oven to 400 degrees. Keep cast iron skillet in the oven while pre-heating.
With a hand mixer or stand mixer, beat sugar, flour, salt, eggs, milk and vanilla for about 2-3 minutes until very fluffy.
Once oven is pre-heated, carefully remove the skillet. Add two tablespoons of butter, allow to melt (which happens quickly because the pan is hot), then pour in the batter.
Bake for approximately 18-20 minutes, but keep your eye on it. It will start to puff up on the sides, just make sure to remove it before they get too brown.
You can serve this traditionally with fresh lemon and powdered sugar, or add any other sweet or savory toppings you’d like.
