Ingredients
2 cups cooked quinoa
1 (overflowing) cup shredded Cheddar cheese
6 scallions, sliced
3 tsp. garlic powder
Salt and pepper
2 tsp. chipotle powder
2 eggs
1 14 oz. can black beans, mashed
3 sweet potatoes
Coconut oil
Directions
Cook the quinoa according to package instructions, although the tried and true method for me is 2 parts water to 1 part quinoa. Let the quinoa boil, then reduce to a simmer and keep covered for 10 minutes. Fluff it after it's cooked through. Pour quinoa into large mixing bowl.
Peel sweet potatoes and boil in water until soft and cooked through. Mash them thoroughly and add to quinoa mixture. Mix in the rest of the ingredients (minus the coconut oil).
If you're using a grill, grease it and heat to medium. If you're using a stove top griddle, use medium high heat and rub it with coconut oil. Form the quinoa mixture into patties (should make about 7-8 mediumish patties). Cook on the griddle for 4-5 minutes per side (or until a nice golden brown).
Serve on a pretzel bun, or any other bun of your choosing, and top with your selection of garnishes. I used avocado and ketchup and it was sheer perfection.
