1 2-3 lb. watermelon, diced
4 oz. crumbled feta
1/2 Vidalia onion, sliced very thin
Salt and pepper
1/4 cup red wine vinegar
1/4 plus 2 Tbsp. olive oil
2 Tbsp. fresh mint leaves, chopped
In a large bowl, toss the diced watermelon, sliced onions and crumbled feta.
In a small bowl, whisk together the red wine vinegar, mint and salt and pepper. Slowly add the olive oil, whisking continuously.
Pour the dressing over the watermelon and toss until evenly coated.
