Thanks to working from home the other day with no meetings or calls to attend, I caught a show I've never seen before: Rachael Ray. I could basically smell this dish through the TV. I added tons of veggies, changed some of the proportions and added extra, extra lemon and wow, you have one of the best weeknight one-pot wonders I've ever made. Smokey, yet bright from the lemon, I served this to my entire family and it's now on our top 10 list.

This is one of the easiest weeknight meals I've ever prepared. The good thing about this dish is that pretty much everything up until the point of assembling can be done ahead of time. Busy mom? Whisk while baby's napping. Working too much? Sauté the onions on a conference call. This is a healthy one-pot wonder that will please everyone. One note of caution: it's very easy to undercook bone-in chicken thighs. Make sure to cook thoroughly (I wish I kept mine in a little longer).
