This is one of the easiest weeknight meals I've ever prepared. The good thing about this dish is that pretty much everything up until the point of assembling can be done ahead of time. Busy mom? Whisk while baby's napping. Working too much? Sauté the onions on a conference call. This is a healthy one-pot wonder that will please everyone. One note of caution: it's very easy to undercook bone-in chicken thighs. Make sure to cook thoroughly (I wish I kept mine in a little longer).
