This dish isn't the prettiest (when you combine the color of pistachios with the color of mustard, well the result isn't gorgeous), but it sure is delicious. I feel guilt-free and happy when I eat salmon, especially when it is topped with a pistachio crust.

I didn't think that "fish"-type cakes could get better than the crabcake, but this puts the classic to shame. Mixed with sweet potatoes and sautéed onions, my mouth is watering just thinking about these salmon cakes.
