This right here was a labor of love. I saw the original version of this Mexican stew on the Today Show advertised as a one-pot dish. My husband and I looked at each other and said, "I don't think so." And we were right; it definitely wasn't. But the intense, rich flavors were worth the extra long labor of putting this dish together. Do it on a day when you have all the time in the world and can luxuriously drink a margarita or glass of wine while cooking.
