Ingredients
1 pint cherry tomatoes, quartered
1 red onion, diced
2 ears fresh corn, removed from husk (grilled or raw)
2 avocados, diced
Zest of one whole lime
Juice of one whole lime + an additional tablespoon
1-2 tsp. salt, based on your taste
Pepper (optional)
3 Tbsp. olive oil
2 tsp. agave
Half a bunch of cilantro
Directions
In a large bowl, using a spatula, mix avocado, tomatoes, corn and red onion together. In a separate bowl (or in a food processor), whisk lime zest, lime juice, salt pepper, olive oil, agave and cilantro. Pour over vegetables and toss together with a spatula. Taste test it and see if it needs anything for your taste. Let sit in fridge for at least an hour before serving.
